INGREDIENTS
- 2-3 servings of cooked pasta (1 cup uncooked spirals)
- 1/4 cup pine nuts
- 4 cloves garlic, minced
- 2 tsp lemon juice
- salt and pepper to taste
- 2/3 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1/4 cup pasta water (water from boiling pasta)
INSTRUCTIONS
- In a pan, heat olive oil over medium heat. Saute garlic and pine nuts for 1-2 mins or until roasted.
- Add pasta water, lemon juice and cooked pasta. Stir in low heat. Add more pasta water to your liking.
- Add salt and pepper to taste.
- Top with feta. Serve!
