Herbed Pasta with Feta and Pine Nuts

INGREDIENTS

  • 2-3 servings of cooked pasta (1 cup uncooked spirals)
  • 1/4 cup pine nuts
  • 4 cloves garlic, minced
  • 2 tsp lemon juice
  • salt and pepper to taste
  • 2/3 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1/4 cup pasta water (water from boiling pasta)

INSTRUCTIONS

  1. In a pan, heat olive oil over medium heat. Saute garlic and pine nuts for 1-2 mins or until roasted.
  2. Add pasta water, lemon juice and cooked pasta. Stir in low heat. Add more pasta water to your liking.
  3. Add salt and pepper to taste.
  4. Top with feta. Serve!
